I am a wife but not yet a mother. I work as an education assistant and am currently a student, specializing in working with kids with autism. This keeps me pretty busy, but in my free time I like to be in the kitchen.
I try not to buy processed food, which means I make most things from scratch...this is helpful since I have a number of foods I am sensitive to including: dairy, wheat/gluten, beef, sugar, pineapple, mushrooms, and kidney beans.
In result, I often find myself saying, “I can’t eat this." Since I went off of dairy and wheat two years ago, the amount of good tasting foods in my diet have dramatically dropped.
One of my current life goals, which has overflowed into this blog, is to find healthy, good tasting, and regular but allergy-friendly recipes so the rest of us can say, “I can eat this!” and confidently share with those around us.
